Wush Wush Oscar Riascos

Oscar Riascos and Wilton Benitez from Paraíso 92 are back once again with a truly extraordinary lot that challenges our perceptions of what a good coffee is. The first time I tasted this lot was at the cupping table with Wilton.

The raspberry notes were simply too good to be true and just made me want to make a flash-brew and enjoy this coffee all summer long. Combined with a lively acidity and a sweet softness, it's truly an impressive and easy-to-drink coffee.

Process and Variety

This coffee has been washed in the Paraíso 92 way, meaning it is neutralized and washed with the utmost precision to concentrate the fermentation on the desired yeasts for the producer.

This is particularly interesting because a mastery of the washed process and an increased understanding of natural yeasts and their impact allows the producer to express the terroir of their farm as clearly as possible.

And not only the terroir of their farm, but also the particularities of the variety itself. I find this particularly important when we talk about a variety as exclusive and unique as Wush Wush. The mastery of Oscar Riascos and Paraíso 92 allows you to truly taste the variety in its purest state.
