A lavender aroma that opens gently, a honeyed sweetness that caresses the palate, then that lively citrus freshness that stretches to a clean, almost crystalline finish. Finally, a touch of peach that recalls autumn. This is a bright, precise coffee that lingers in the memory long after the last sip.
The producer
Sebastián RamĂrez was born in the heart of QuindĂo, Colombia, home to a rich and vibrant coffee culture. Coming from a lineage spanning four generations of producers, he chose to take over Finca El Placer, the family farm perched between 1,650 and 2,000 m above sea level, surrounded by native trees that protect and nourish the coffee plants. In just a few years, Sebastián has become a recognized figure in Colombian specialty coffee, combining tradition and innovation.
The process
Here, nothing is left to chance. The cherries, harvested with almost scientific rigor (95% perfectly ripe, 5% semi-ripe), enter a controlled anaerobic fermentation cycle: 48 hours in sealed vats, under injection of COâ‚‚ and oxygen. This is followed by slow drying in the shade, which preserves the aromatic integrity, before stabilizing for a few weeks. The result: a cup of remarkable purity and complexity.
Innovation in the service of taste
Sebastián is a pioneer. At El Placer, he has developed a unique fermentation protocol with dehydrated mandarin peels, combining double anaerobic fermentation, oxygenated immersion, and slow drying. He even incorporates aromatic plants like lavender and jasmine into the process to enrich the coffee's floral palette. An on-site microbiology laboratory allows him to explore the influence of specific yeasts and fermentations on the sensory profile.
